WHAT’S ON THE MENU?
Macedon Dry Gin. An homage to the best of the old world gins, with a unique twist and balanced intensity provided by the use of Australian native lemon myrtle and mountain pepper berry, and a freshness provided by local estate-grown ingredients.
Ambrosian Gin. Utilising the bold flavours of mandarin, kaffir lime and white sesame, along with fresh tumeric, galangal and ginger, Animus Ambrosian is a bold reinterpretation of gin rich with both Australian and South East Asian influences.
Arboretum Gin. A complex herbaceous gin utilising a range of local estate-grown ingredients: Fresh strawberry gum leaf, lemon thyme, rosemary, oranges and native bush tomato support the classic gin notes of bold juniper, coriander seed, and citrus, with a long, spicy balanced finish.
Davidsonia Gin. Animus Distillery’s riff on a traditional English sloe gin, with a distinctly Australian intensity and character. With a distinctive palate of sour plum, raspberry and feijoa rounded out by with the juniper, citrus and classic spice of our Macedon Dry Gin, this unique expression is exquisite neat, with a dash of soda and a squeeze of lime, or for a range of distinctive fruit-driven gin cocktails.

We’ve developed a menu of ginspired share plates, designed in collaboration with Matt Wilkinson, celebrated chef and Creative Director of ‘all things made with gin’ at Four Pillars. Enjoy this gin pig feast with a selection of signature gin cocktails, and paired wines from Yarra Valley winemakers Payton & Jones Wines.
