Margaret River in Western Australia is home to a host of established producers creating exceptional wines, but more importantly for Gin production, a pristine source of water and abundant natural botanicals. Hand selected, delicate flavourings such as cinnamon myrtle, Australian bush tomato and wattleseed bring a profile that is uniquely Australian to these Gins. Water is triple filtered for purity.

The Sabre is a uniquely Australian take on a traditional London Dry style. The bright, aromatic flavours are led by an undercurrent of citrus with a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture to the gin. Perfect as a classic G&T with lemon to release the intricacies of this uniquely styled gin.

Tasting note: Clear, silvery, slightly glycerous appearance. Powerful aromatics show excellent purity; unashamedly juniper focused issuing a classic piney / woody / peppery scent with an underlying incense-like sweetness emerging with time. Exceptionally soft, smooth texture and super clean; again, juniper heavy flavours dominate and are supported by a gentle peppery warmth. Dry, slightly waxy finish. Subtle anise, juniper and pepper fade. A faultless example of the London Dry genre with loads of charm.
